White chocolate            300g

Butter                           200g

Milk                              250ml

Caster sugar                 165gm

Vanilla essence              1 Tsp 

Eggs                            2

Self raising flour           100g

Plain flour                    50g

 

Method

Pre-heat oven to 160 degrees celcius

Spray a 20cm round cake tin with cooking spray

Line the base with a round piece of baking paper

Place chocolate, butter, milk and sugar in a saucepan on medium heat

Stir until butter and chocolate have melted

Take off the heat and stir until completely smooth

Let this mix cool for 15 minutes

Now add the eggs and vanilla to the chocolate mix

In a separate bowl mix the sifted flours together

Add one cup of the chocolate mix to the flour and mix into a smooth paste

Keep adding one cup at a time until the mix is all combined and smooth

Pour the mix into the cake tin and bake for about 1 hour and 10 minutes (check the centre with a skewer for doneness)

Let the cake cool for 1 hour in the tin before turning out
